Streusel-Filled Coffee Cake
Batter:
1 1/2 c. sifted flour --------------------------------------- 1/4 c. shortening
3 tsp. baking soda --------------------------------------- 1 egg
1/4 tsp. salt ----------------------------------------------- 1/2 c. milk
Combine dry ingredients. Cut in shortening with dough blender or knife. Blend in well beaten egg mixed with milk. (Mama would make ahead and store in refrigerator overnight.)
Streusel:
1/2 c. brown sugar ---------------------------------- 2 Tbsp. melted butter
2 tsp. cinnamon ------------------------------------- 1/2 c. chopped nuts
2 Tbsp. all-purpose flour
Mix ingredients together. Spread 1/2 batter in bottom of 9x9 inch cake pan (well greased and floured.) Sprinkle with 1/2 streusel mixture. Add remaining batter and top with remaining streusel. Bake 25 to 30 minutes at 375 degrees.
